Salmon Spread & Salad from Leftovers

Previously I wrote about using leftover grilled salmon. Well, I did not use all of it so I tried another salmon dish today. And guess what? I still have salmon left for another dish that I will include in this post. This is what happens when you crave a food that others in your home do not enjoy.
I toasted 8 slices of French bread. I like to cook mine on a skillet, medium heat, both sides, only the crust browned a touch. While they were toasting I mixed the spread standing next to the stove so I did not burn the bread or turn them into large crouton discs.
2 ounces of cream cheese
2 ounces of plain, full fat Greek yogurt
2 ounces of leftover, grilled salmon. Flaked and heated up for 15 seconds in the microwave.
2 Tbs. chopped chives
6 drops of Worcestershire sauce
6 drops of red tobasco
salt and pepper to taste
I decided to make a topping for the spread with 8 cherry tomatoes cut into fours, a tablespoon of chopped chives, salt and pepper to taste, and mixed them separately from the salmon spread.
I spread the salmon mix over the toasted French bread and topped each with the tomato mix. It was good and surprisingly three pieces filled me for a few hours. In the end, I do not feel that the tomato topping added anything to the taste, it was just a nice garnish.

There is something lacking in the spread, not much, but it needed a punch. Possibly dill? I will try adding something new to it next time. If you try this recipe and add flavors of your own, comment below and let us know what you changed!

Caesar Salad with Grilled Salmon Leftovers
After making two recipes from leftover salmon for two consecutive dinners, and cooking breakfast in the morning and meal prepping my husband’s lunches for work, I wasn’t feeling like putting much effort into anything. No kids at home, husband gone, reading, studying, and writing all day. I still need to wash last night’s dishes, so I don't want to add more dishes to the pile than necessary.
I ran into the grocery store to cross off things on my to do list and saw a prepared bag for Caesar salad and decided it would work just fine. I also ended my grocery trip feeling proud of myself. I made it through the checkout line without buying a package of Reese’s cups and eating them before leaving the parking lot. Success!

So three recipes from leftover salmon (see previous post for the Salmon and Feta Quiche). One recipe requiring measuring and baking, one requiring toasting bread and few measurements, and one requiring almost nothing. Three levels of cooking depending on the time you have or to suit the mood your in.
Leftovers can give you the ability to be creative, make the next meal a little easier on you, or just allow you to take a break, to be frugal. Waste not, want not.
